A HEALTHY RECIPE THAT'S PERFECT FOR SUMMER GET-TOGETHERS 

Summer is the peak season for many vegetables, like bell peppers, zucchinis, tomatoes, and onions. Grilled skewers make these nutritious ingredients extremely tasty and easy to season based on personal taste. They're easy to serve and eat, making them perfect for picnics, barbecues, or any other family gatherings you may have have this summer.

Barbecue Rosemary Veggie Skewers

These skewers are a flavorful addition to any outdoor gathering or meal. Perfect for picnics and summer nights, they're fresh, easy, and perfect for warm weather.

What you need

Assorted vegetables (such as bell peppers, cherry tomatoes, zucchini, mushrooms, onions, etc.), chopped into bite-sized pieces

  • Wooden skewers, soaked in water for at least 30 minutes
  • Fresh rosemary sprigs
  • Olive oil
  • Salt and pepper, to taste
  • Barbecue sauce (store-bought or homemade)


Directions

  • Wash and chop the assorted vegetables into bite-sized pieces. Try to keep them all roughly the same size for even cooking.
  • Take a soaked wooden skewer and thread the chopped vegetables onto it, alternating between different types for variety and color. Leave a little space at each end of the skewer for easy handling.
  • Strip the leaves from the bottom two-thirds of each rosemary sprig, leaving the top intact. These will be added to the skewers for extra flavor.
  • Slide the assembled vegetable skewers onto the prepared rosemary sprigs, gently pressing them onto the woody stems. The rosemary will infuse the vegetables with its aromatic flavor as they cook.
  • Season the skewers by drizzling with olive oil and salt and pepper (to taste). Alternatively, you can brush them with barbecue sauce for a different flavor.
  • Preheat your barbecue or grill to medium-high heat.
  • Place the assembled skewers on the preheated grill and cook for about 8-10 minutes, turning occasionally, or until the vegetables are tender and lightly charred.
  • Once the skewers are cooked to your desired doneness, remove them from the grill and transfer to a serving platter. Garnish with additional rosemary sprigs if desired and serve hot.
